Ground Beef Stir Fry

Prep: 10 minutes Cook: 30 minutes

1 cup Basmati rice
1 can chicken broth
1.5 lb ground beef
1/8 tsp salt
1/8 tsp pepper
3 cloves garlic
1 can diced tomatoes
1 small red onion
1 small red pepper
1 tsp extra light olive oil
snow peas (optional)

  • Chop onion, red pepper, and garlic. In frying pan, heat oil over Medium-High, then add garlic.
  • Use small amount of snow peas (about 20 or less). Trim edges of each one. Add to pan.
  • Add ground beef, onion, red pepper, salt, pepper. Cook until brown.
  • While meat is browning, cook rice.
  • Boil chicken broth and rice. Once it starts boiling, let continue to boil (COVERED) for 10 minutes.
  • Uncover rice for 5 minutes.
  • Add tomatoes to meat.
  • Serve beef stir fry over the Basmati rice.
