Roast Beef and Vegetables
Prep: 15 minutes Cook: 2 hours 30 minutes
1.5lb roast
1/8 tsp pepper
1/8 tsp salt
3 tsp extra light olive oil
20 baby carrots
3 brown potatoes
1 small yellow onion
1 small red onion
1 cup water
- Peel potatoes. Cut up in chunky pieces. Chop onions.
- Place roast in an oven-safe pan. Place potatoes, carrots, and onions around beef.
- Add water.
- Put olive oil on top of roast. Add salt and pepper.
- Bake at 375° for 2 ½ hours, baste ½ way through.
